AUSTIN, Texas (October 20, 2008) – Food enthusiasts or anyone passionate about food take note -- Texas Culinary Academy (TCA) has created a new cooking program for the home cook, beginning next month.
Classes are as wide-ranging as individual tastes. From broad-based fundamentals to instruction on the preparation of specific dishes, classes vary from practical (hands-on) to demonstration classes; and are designed specifically for those who yearn to learn more about great food and how to make it at home. Texas Culinary Academy’s Bleu Cooks program also includes more specific areas of instruction such as Bleu Wine, Bleu Kids and Bleu Bakes.
The first classes will held on Saturday, November 15 to help those interested prepare the finest feasts for the holidays!
Saturday, November 15
Making Pies 101 – 9 a.m.
In this three-hour class, learn the secrets of perfect pie dough, and fillings for pumpkin custard, fresh apple and bourbon pecan pie. And you can take the pies home! ($50)
Turkey 101 – 10 a.m.
Learn the techniques of brining, frying, grilling, and smoking your turkey. ($25)
Thanksgiving Sides – 1 p.m.
Learn to put a southwestern twist on the classics. In this hands-on class, prepare Chipotle Sweet Potato Gratin, Cilantro Honey Spaghetti Squash; and Chorizo Cornbread Stuffing. ($50)
Saturday, December 6
Holiday Breads – 9 a.m.
Learn the classic holiday breads of German Stollen, Cranberry Walnut Tea Bread, Brioche Rolls, and breakfast cinnamon rolls. ($50)
Kids Gingerbread Houses – 9 a.m.
Kids learn the basics of building and decorating gingerbread houses with royal icing, marzipan and candies. ($25)
Cookie Decorating – 1 p.m.
Learn how to make a perfect sugar cookie and then decorate them into works of art using royal icing. ($50)
Fees vary for each class and hands-on classes include ingredients and tools needed to participate. All classes include a meal and a beverage for participants. Attendees will take home recipes they have completed in the course.
